This dish is a favorite in our home. It seems like anything that you call pizza makes kids want to try it. Hopefully, it will be a long time until they know it’s good for them unless they are already vegee lovers
Let’s keep it simple by not doing exact measurements with this one. We use a large frying pan and layer the vegetables by covering the previous layer with the next veggie:
Start with diced tomatoes and onions
Thinly sliced peppers and mushrooms
Thinly sliced zucchini with or without skins
Another layer of tomatoes without onions
Cook the vegetables like this until zucchini is tender. Make sure your bottom layer of tomatoes is at least a half to a whole inch deep, so it doesn’t dry up during this time. It should take 15 to 20 minutes on medium heat.
After the veggies are tender sprinkle bread crumbs on top to lightly cover. Sprinkle parmesan cheese and Italian seasonings like garlic, oregano, and basil. Sprinkle with mozzarella cheese to cover the entire dish. Cover until cheese melts.
If you prefer more juice add fewer bread crumbs
If you want it to remain in layers as you serve it and less juicy, add plenty of bread crumbs.
